Recipe: Cheese Lima Bean Casserole

Cheese Lima Bean Casserole

2 cups grated American, pimiento, or cheddar cheese         1/2 teaspoon salt
2 cups cooked lima beans                                                    1/8 teaspoon pepper
1/4 cups chopped green pepper                                           2 tablespoons flour
1/4 cup chopped onion                                                        1/4 cup water
1 1/2 cups canned tomatoes                                                 1 cup cracker crumbs
2 tablespoons butter

Combine 1 cup cheese with beans, green pepper, and onion and place in 1 1/2-quart casserole. Heat tomatoes with seasonings, stir in flour and water mixed to a paste, and cook until thickened. Pour over lima bean mixture. Combine cracker crumbs with remaining cheese and spread on top. Top with the butter. Bake in 350-degree oven for 30 minutes or until browned. 6 servings.
